White Oak Wheat Beer

Inspired by the aromas and flavours more typically found in a cup of Earl Grey tea, this German-style wheat beer has been brewed at a warmer temperature to encourage sweeter, spicier flavours to develop. The brew has been aged over oak and then infused with dried bergamot and blood orange oil to create a fragrant and refreshing finish.

Our resident brewer, Rachel, has been hard at work both developing the recipe for our White Oak Wheat Beer, and as you can see putting in the manual labour hours! Rachel assures us her blood, sweat and tears were not included in the recipe...

 

"There are a few different German and Belgian wheat beer styles, we wanted to design an Innis & Gunn wheat beer that would work with oak maturation, but also be something quite different. German kristallweizen appealed as a style as they lack the yeasty and spicy complexity often associated with hefe weizen beers, and have a cleaner and more delicate flavour. Floral, fruity aromas are often noted in classic examples of this style. We were also inspired by Earl Grey tea and wanted to incorporate notes of bergamot and blood orange rather than the typical lemon notes in many wheat beer.

Three hundred kilos of bergamot oranges, around three thousand fruit, were hand peeled. The zest was then air dried before packing into infusion bags so that it could be added to the Oakerators® with the white oak and Fuggles hops. We also added 50kg of blood orange juice into the maturation vessel."

White oak is native to North America and typically contains a higher vanillin content than its European counterpart, which has a strong influence on the flavour of whatever comes into contact with it once it's made into barrels.

Our white oak is air-dried for 24 months before before it's made into casks and then charred to create a natural barrier between the spirit and the very heavy, virgin vanilla flavour that's locked within the grain of the wood. It's only at this point that our beer would come into contact with it either as a cask or as chips in our Oakerators®.
