Here at The Beer Kitchen we like to incorporate our unique oak-aged beers in to our menu in as many tasty ways as we can. The house smoked salmon for example, is smoked over oak chips from our Oakerators®.

Confused looks abound. What is an Oakerator® I hear you say?

Oakerators® are technology we use to oak age some of our beers. In essence they are giant coffee percolators which infuse incredible oak flavour in to our brews after fermentation.

We have been working wonders with this unique piece of kit since 2010, and several of our most popular brews would not have come to life without it – the legendary Canadian Cherrywood Finish being a prime example.

Primarily, we age our beers with American heartwood oak as this has more vanillin compounds, resulting in a sweeter finish, with very little tannin. Using our American oak chips for our in-house smoking gives our fish a more powerful smoky flavour, but at the same time, a lovely sweet character which offsets this intensity.

Join us for a cold sharing platter, featuring our delicious hot smoked salmon, and enjoy a glass of our Toasted Oak IPA. This great beer will perfectly complement the fishy dish and is another of our Oakerator® brews. We add a third charge of hops in with the oak, which allows us to harness all the hops aromatic qualities without adding a huge amount of bitterness. Ideal.
