In 2003, we discovered the wonder of cask matured beer. Ever since then, our imagination has led us to many unexpected new beers. Recently, we began to wonder what a spiced rum finished beer would be like…
First, we had to make our own spiced rum. To do this we steeped Caribbean rum with our own aromatic spice mix to create a heady, flavour packed spiced rum. We then seasoned oak casks with this spiced rum, imparting all the exotic flavour into the oak. Finally, we matured a Scottish Golden Ale using these casks.
Absorbing all the flavours from the oak, the beer adds its own smooth, malty flavour to create something that will live long in the memory.
