Haggis & Cheddar Puff Pastry Bites

Little bites, big flavour. Rich, crumbly haggis meets sharp mature cheddar, a hint of thyme, and a whisper of mustard, all wrapped in golden, buttery puff pastry. Crispy on the outside, oozy and savoury on the inside - the perfect snack to share over a cold pint.

The Ingredients

  • 1 sheet all-butter puff pastry (ready-rolled)
  • 200g cooked haggis (crumbled or finely diced)
  • 100g mature cheddar (grated)
  • 1 small red onion, finely chopped
  • 1 tsp wholegrain mustard
  • 1 tsp fresh thyme leaves
  • 1 egg (beaten, for egg wash)
  • Sea salt & cracked black pepper

The Method

  • Preheat oven to 200°C (fan). Chill your beers in the fridge. Prepare filling in a bowl, combine crumbled haggis, cheddar, finely chopped onion, mustard and thyme. Season with cracked black pepper and seaweed salt.
  • Assemble the bites by rolling out puff pastry on a floured surface. Spread the haggis and cheddar mixture on the pastry and roll into a tight sausage of pastry.
  • Slice into pinwheels and brush each bite with egg wash. Sprinkle with extra grated cheese and bake for 18–22 minutes until golden, puffed, and crispy.
  • Serve warm!
